If you are anything like me, at the end of the week, you find yourself with a few bananas that haven't been gobbled up by the kids and are looking a bit lackluster. Once they get a few dark spots on the peel the kids won't touch them. I, however, am a smart enough woman to know that the riper the banana, the sweeter it is, making those sad looking bananas the perfect candidates for banana bread. - 1 2/3 cups all purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup sugar
- 2 tablespoons sugar
- 2 - eggs
- 1/2 cup canola oil
- 4 - bananas, very ripe
- 2 tablespoons sour cream
- 1 teaspoon vanilla extract
- FOR THE FROSTING
- 4 ounces cream cheese, softened
- 1/4 cup butter, softened
- 1 cup powdered sugar
- 1 tablespoon milk
- 1 dash salt
