mom's banana bread

This recipe is from my mom and it's a hit because it's very moist unlike most banana bread. It does get a little dark when baking but it won't affect the flavor. Even my fussiest two eaters will eat a half a loaf after school.

Ingredients

  • 1 cup sugar
  • 1/2 cup margarine
  • 3 - bananas - mashed
  • 2 - eggs, beaten
  • 1 1/4 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda

How To Make mom's banana bread

  • Step 1
    Cream sugar and margarine. Add mashed bananas and eggs and beat well.
  • Step 2
    Fold in dry ingredients and pour into greased loaf pan. I put a slip of wax paper on the bottom so it doesn't stick.
  • Step 3
    Bake at 350 for 55 minutes.
