Mini Blueberry Corn Fritters

Light, fluffy, and oh so addictive!

They are so quick and easy to make, it's almost dangerous - lol.

The blueberry is a great addition to a great little corn fritter. These make a great snack, or breakfast treat with a cup of coffee.

Makes about 2 dozen minis or 12 regular

1 1/3 c
ap or bread flour
1 tsp
2 tsp
baking powder
4 Tbsp
2/3 c
buttermilk (whole milk with work too)
1 Tbsp
vegetable oil
1 large
1 c
1/2 c
blueberries, diced


powdered sugar, for dusting

How to Make Mini Blueberry Corn Fritters


  • 1Heat deep fryer for minis, or oil in a medium skillet for regular fritters.
  • 2In a mixing bowl add flour, salt, baking powder, and sugar.
  • 3In a separate container add milk, oil, and egg. Whisk to combine.
  • 4Pour wet ingredients into dry. Stir until combined.
  • 5Fold in corn and blueberries.
  • 6For minis carefully drop a heaping tablespoon of batter into hot oil. I cook 6 at a time.

    For regular drop about 1/4 cup scant into skillet, 4 at a time.
  • 7Cook until golden about 2 minutes. Turn and cook until golden and crispy another 2 to 3 minutes.
  • 8Drain and allow to cool 5 minutes before serving.
  • 9Dust with powdered sugar if desired and enjoy!
