1 tsp
vanilla extract
1/3 c
brown sugar, lightly packed
1/3 c
1/2 c
1/4 c
canola oil
1/2 c
light sour cream **
eggs, beaten
3/4 c
whole wheat flour
1 c
all purpose flour
1 tsp
baking soda
1 tsp
baking powder
can use 3/8 cup sour lowfat milk plus 2 tbls. canola oil

How to Make Lighter Banana Bread


  • 1Preheat oven to 350 degrees. Spray two 8.5 x 4.25 loaf pans.
  • 2In a large bowl, combine sugars, applesauce, oil, vanilla, sour cream (or sour milk) and eggs.
  • 3Mash bananas and stir into the sugar mixture.
  • 4Add flours and baking soda and baking powder. Stir until just combined.
  • 5Spoon into prepared pans. Bake at 350 degrees for 50-55 minutes. Cool in pans for 15 minutes; remove from pans and cool completely on wire racks.
