Ingredients

  • 3 - medium ripe bananas
  • 1 teaspoon vanilla extract
  • 1/3 cup brown sugar, lightly packed
  • 1/3 cup sugar
  • 1/2 cup applesauce
  • 1/4 cup canola oil
  • 1/2 cup light sour cream **
  • 2 - eggs, beaten
  • 3/4 cup whole wheat flour
  • 1 cup all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ** - can use 3/8 cup sour lowfat milk plus 2 tbls. canola oil

How To Make lighter banana bread

  • Step 1
    Preheat oven to 350 degrees. Spray two 8.5 x 4.25 loaf pans.
  • Step 2
    In a large bowl, combine sugars, applesauce, oil, vanilla, sour cream (or sour milk) and eggs.
  • Step 3
    Mash bananas and stir into the sugar mixture.
  • Step 4
    Add flours and baking soda and baking powder. Stir until just combined.
  • Step 5
    Spoon into prepared pans. Bake at 350 degrees for 50-55 minutes. Cool in pans for 15 minutes; remove from pans and cool completely on wire racks.
