Ingredients
- 3 - medium ripe bananas
- 1 teaspoon vanilla extract
- 1/3 cup brown sugar, lightly packed
- 1/3 cup sugar
- 1/2 cup applesauce
- 1/4 cup canola oil
- 1/2 cup light sour cream **
- 2 - eggs, beaten
- 3/4 cup whole wheat flour
- 1 cup all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ** - can use 3/8 cup sour lowfat milk plus 2 tbls. canola oil
How To Make lighter banana bread

Step 1Preheat oven to 350 degrees. Spray two 8.5 x 4.25 loaf pans.

Step 2In a large bowl, combine sugars, applesauce, oil, vanilla, sour cream (or sour milk) and eggs.

Step 3Mash bananas and stir into the sugar mixture.

Step 4Add flours and baking soda and baking powder. Stir until just combined.

Step 5Spoon into prepared pans. Bake at 350 degrees for 50-55 minutes. Cool in pans for 15 minutes; remove from pans and cool completely on wire racks.
