Ingredients

3medium ripe bananas

1 tspvanilla extract

1/3 cbrown sugar, lightly packed

1/3 csugar

1/2 capplesauce

1/4 ccanola oil

1/2 clight sour cream **

2eggs, beaten

3/4 cwhole wheat flour

1 call purpose flour
-
1 tspbaking soda
-
1 tspbaking powder

**can use 3/8 cup sour lowfat milk plus 2 tbls. canola oil
How to Make Lighter Banana Bread
- Preheat oven to 350 degrees. Spray two 8.5 x 4.25 loaf pans.
- In a large bowl, combine sugars, applesauce, oil, vanilla, sour cream (or sour milk) and eggs.
- Mash bananas and stir into the sugar mixture.
- Add flours and baking soda and baking powder. Stir until just combined.
- Spoon into prepared pans. Bake at 350 degrees for 50-55 minutes. Cool in pans for 15 minutes; remove from pans and cool completely on wire racks.
