I honestly do not remember where I found this recipe. I think it was from a Southern Living magazine. It is super simple to make just two basic ingredients. the variations are endless.

yield makes one 8-inch loaf

Ingredients

  • 2 cups ice cream, softened ( i used chocolate with choclate chunks and a cherry swirl)
  • 1-1/2 cup self rising flour
  • - add in nuts, coconut, chips, lemon zest, etc if desired

How To Make ice cream bread

  • Step 1
    Stir together ice cream and flour, stirring just until flour is moistened. Spoon batter into a greased and floured 8- x 4-inch loaf pan.
  • Step 2
    Bake at 350 for 40 to 45 minutes or until a wooden pick inserted in center of bread comes out clean. Remove from pan, and cool on a wire rack.
