We just do not allow bananas to get tossed in this kitchen! When they're too ripe to eat, my husband knows he'll get a loaf of this to take to work to share with co-workers who've all asked for the recipe. My neighbors are all tickled to get an unexpected "gift" because, like I said, bananas don't get tossed away in this kitchen! It's very moist and delicious.

Ingredients For gail's banana bread

2eggs

1 cgranulated sugar

1/2 cvegetable oil

1 tspbaking soda

1 call purpose flour

1/2 tspsalt

2banans, mashed
How To Make gail's banana bread

1In medium mixing bowl, beat eggs, lightly.

2Add sugar, vegetable oil, soda, salt and flour. Beat on medium with electric mixer until well blended.

3Add mashed bananas. Stir to combine.

4Pour into a well buttered loaf pan.

5Bake in 350 degree oven for 50-55 minutes or until golden brown and toothpick test comes back clean.
