We just do not allow bananas to get tossed in this kitchen! When they're too ripe to eat, my husband knows he'll get a loaf of this to take to work to share with co-workers who've all asked for the recipe. My neighbors are all tickled to get an unexpected "gift" because, like I said, bananas don't get tossed away in this kitchen! It's very moist and delicious.

Ingredients For gail's banana bread

    eggs
  • 1 c
    granulated sugar
  • 1/2 c
    vegetable oil
  • 1 tsp
    baking soda
  • 1 c
    all purpose flour
  • 1/2 tsp
    salt
  • 2
    banans, mashed

How To Make gail's banana bread

    In medium mixing bowl, beat eggs, lightly.
  • 2
    Add sugar, vegetable oil, soda, salt and flour. Beat on medium with electric mixer until well blended.

    Add mashed bananas. Stir to combine.

    Pour into a well buttered loaf pan.

    Bake in 350 degree oven for 50-55 minutes or until golden brown and toothpick test comes back clean.
