I always fine this is a good way to use up them unwanted ripe bananas. This is a quick and easy bread to make and it tastes delicious . My boys have it toasted with butter spread over the slice .... Hope you like and enjoy ... :)

Ingredients

  • 2 cups 8oz plain flour
  • 1/2 teaspoon salt
  • 1 teaspoon heaped baking powder
  • 1 teaspoon cinnamon
  • 1/4 cup 4oz soft brown sugar
  • 2 - eggs
  • 1 teaspoon vanilla extract
  • 3 - oz sunflower oil
  • 2 - meduim riped banana's

How To Make easy banana bread.

  • Step 1
    pre-heat your oven to 180c/350f...grease well a loaf tin , put a sheet of grease proof paper down the bottom and leave a bit to hang over the edges of both sides .
  • Step 2
    In a large bowl sift flour, salt, baking powder, cinnamon, stir in the sugar, In a jug mix in the eggs, sunflower oil and vanilla extracts , do not beat add to the flour mixture and mix together .
  • Step 3
    Smash up the banana's and fold into the mixture.
  • Step 4
    Pour the mixture into your prepared tin , bake in the oven for 50- 60 minutes , after the first 30minutes of baking the bread . I would cover the top with some tin foil to prevent the banana bread becoming to over baked on the top .
  • Step 5
    Once the banana bread is done , you can cocktail stick test it ,if the stick comes out clean the bread is done . leave in tin for 10 minutes , then remove from tin and leave to completely cool on wire rack...
