Cranberry Banana Bread

1/4 cbutter, softened
1 cmashed ripe bananas
1-1/2 tspbaking powder
1/2 tspbaking soda
1/2 tspcinnamon (optional)
1- 1/2 ccranberries, coarsely chopped
How to Make Cranberry Banana Bread
- In a large bowl, beat butter with sugar until fluffy; beat in eggs, 1 at a time, beating well after each.
Add bananas, mixing well.
- Whisk together dry ingredients.
Stir into butter mixture alternately with milk, making 3 additions of dry ingredients and 2 of milk.
Stir only until to moisten.
Fold in cranberries and nuts.
- Put into a greased and floured 9 X 5 inch pan.
Bake at 350 degrees for 1 hour and 10 minutes.
Cool in pan on wire rack for 10 minutes.
Remove from pan and cool completely on wire rack.
