Ingredients

  • 1/4 cup butter, softened
  • 1 cup sugar
  • 2 - eggs
  • 1 cup mashed ripe bananas
  • 2 cups flour
  • 1-1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)
  • 1/4 cup milk
  • 1- 1/2 cups cranberries, coarsely chopped
  • 1/2 cup nuts

How To Make cranberry banana bread

  • Step 1
    In a large bowl, beat butter with sugar until fluffy; beat in eggs, 1 at a time, beating well after each. Add bananas, mixing well.
  • Step 2
    Whisk together dry ingredients. Stir into butter mixture alternately with milk, making 3 additions of dry ingredients and 2 of milk. Stir only until to moisten. Fold in cranberries and nuts.
  • Step 3
    Put into a greased and floured 9 X 5 inch pan. Bake at 350 degrees for 1 hour and 10 minutes. Cool in pan on wire rack for 10 minutes. Remove from pan and cool completely on wire rack.
