banana & pineapple loaves w/ pineapple buttercream

These are moist and good loaves.

Ingredients

  • 3 - eggs
  • 2 cups sugar
  • 1 cup canola oil
  • 2 teaspoons vanilla extract
  • 3 medium ripe bananas, mashed
  • 3 cups flours
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 cup chopped walnuts or pecans
  • 1/2 cup pineapple, drained
  • PINEAPPLE FROSTING
  • 2 tablespoons unsalted butter, soft
  • - pinch of salt
  • 2 1/2 cups confectioners sugar, more if needed
  • 2 tablespoons milk or 1/2 & 1/2, more if needed
  • 1 teaspoon lemon juice
  • 1/2 cup pineapple, drained

How To Make banana & pineapple loaves w/ pineapple buttercream

  • Step 1
    Preheat the oven to 325 if you are using glass loaf pans or 350 for metal. Beat eggs, sugar, oil and vanilla. Add mashed bananas, then add flour, salt, baking powder and cinnamon.
  • Step 2
    Add the nuts and pineapple and pour into two greased & floured loaf pans and bake 1 hour or until loaves test done in center with toothpick.
  • Step 3
    Remove from oven when done and loosen bread by running a knife around the sides. Cool 10 minutes and remove from pan to rack to cool completely.
  • Step 4
    Frosting-In a mixer, cream butter, salt, milk and confectioners sugar until creamy add lemon juice and pineapple and continue beating. The frosting should be thick but creamy, so you may need more confectioners sugar to reach the right consistency. Frost the top of both loaves with a thick amount of frosting. Serve.
