Ingredients
- 2 cups all purpose flour
- 1-1/4 teaspoon baking powder
- 1/2 teaspoon cinnamon, ground
- 1/2 teaspoon salt
- 3/4 cup sour cream
- 3/4 cup sugar (granulated)
- 1/2 cup canola oil
- 1 teaspoon vanilla extract
- SET ABOVE ASIDE. MIX THE NEXT 4 INGREDIENTS TOGETHER
- 3/4 cup bananas
- 2 - large eggs
- 1/2 cup coconut - shredded
- 1 cup walnuts or pecans
How To Make banana-coconut quick bread

Step 1combine all ingredients and pour into a sprayed 8.5"x4.5" loaf pan. OR use 3 mini loafs (5-3/4"x3-1/4" each)

Step 2Top with 2 Tbsp coconut

Step 3Bake at 350* for approximately 55 minutes or until golden brown (for mini loaves, bake approx. 40 minutes)
