banana bread
I couldn't find my favorite Banana Bread Recipe, so I made this one! Thought I better jot it down before I forget what I did! Hope you like it, we enjoyed it very much!

Makes 1 Large Loaf, or 1 Loaf and several muffins!
Ingredients
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon salt (sea salt)
- 1/2 cup butter (real butter)
- 1/2 cup white granulated sugar
- 1/2 cup packed light brown sugar
- 2 - eggs, beaten
- 3 - large overripe bananas, mashed
- 1 cup applesauce, cinnamon (motts)
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 teaspoon vanilla (mexican, brown)
- OPTIONAL TOPPING
- 1/3 cup packed light brown sugar
- 1/8 cup all purpose flour
- 1 tablespoon butter (real butter)
- 1/4 teaspoon cinnamon
How To Make banana bread

Step 1In medium bowl cream butter and sugars together. Then add in mashed bananas, beaten eggs, applesauce & vanilla. Mix well.

Step 2Make well in dry ingredients and pour wet ingredients into well and mix together only until all ingredients are incorporated. Over mixing will cause the bread to be dry!

Step 3Bread does not rise much, so you can fill to within 1/2 inch or so of the top of the loaf pan. Add topping if you want at this time (although it is not needed).

Step 4Check doneness with toothpick in several places to make sure the bread is done. Allow to set in pan for 10 minutes, then (if you are sure it is done) remove from pan and allow to cool completely (if you can before you eat it all!)
