I wanted to make banana bread one day and I couldn't find my go to recipe. I come up with this by combining a couple of recipes. This is the best! I pleasantly surprised myself and my family and friends love it as well!

1 stick
butter, room temperature
3/4 c
brown sugar, firmly packed
2 large
eggs - room temperature
1/3 c
vanilla greek yougart or honey vanilla flavored (1 single serve cup)
2 c
mashed, ripe bananas ( 4 very large - i freeze mine in the peel. pull out of the freezer and thaw just until softened than add to your recipe.)
1 1/2 tsp
vanilla extract
2 c
ap flour
1 tsp
baking soda
1/4 tsp
1/2 tsp
1/2 c
chopped walnuts (optional)

How to Make Banana Bread


  • 1Preheat oven to 350 degrees. Lightly grease 2 loaf pans (I used glass).
  • 2Cream together butter and brown sugar for about 3 minutes. Add eggs one at a time beating well after each addition. Mix in the yougart, mashed bananas and vanilla for 2 minutes. In another bowl combine dry ingredients except the walnuts. Using a spatula gradually fold the dry ingredients into the wet only until there are no more flour pockets. Do not over mix. Fold in Walnuts.
  • 3Spoon batter evenly in two loaf pans and bake 30 to 45 minutes or until a toothpick in the center comes out clean.
