I wanted to make banana bread one day and I couldn't find my go to recipe. I come up with this by combining a couple of recipes. This is the best! I pleasantly surprised myself and my family and friends love it as well!

Ingredients
- 1 stick butter, room temperature
- 3/4 cup brown sugar, firmly packed
- 2 large eggs - room temperature
- 1/3 cup vanilla greek yougart or honey vanilla flavored (1 single serve cup)
- 2 cups mashed, ripe bananas ( 4 very large - i freeze mine in the peel. pull out of the freezer and thaw just until softened than add to your recipe.)
- 1 1/2 teaspoons vanilla extract
- 2 cups ap flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 cup chopped walnuts (optional)
How To Make banana bread

Step 1Preheat oven to 350 degrees. Lightly grease 2 loaf pans (I used glass).

Step 2Cream together butter and brown sugar for about 3 minutes. Add eggs one at a time beating well after each addition. Mix in the yougart, mashed bananas and vanilla for 2 minutes. In another bowl combine dry ingredients except the walnuts. Using a spatula gradually fold the dry ingredients into the wet only until there are no more flour pockets. Do not over mix. Fold in Walnuts.

Step 3Spoon batter evenly in two loaf pans and bake 30 to 45 minutes or until a toothpick in the center comes out clean.
