Babka bread is a Polish bread. It is usually found in bakeries during Easter and Christmas. This one has cheese and Apricot filling. Apricot's,raisins,prunes,and dates you find in most Polish desserts,and breads. It is one of my favorite breads. I am part Polish,and have been eating Babka's since I was a child.This is very delicious. Enjoy!!

Ingredients

  • FILLINGS
  • 1/3 cup granulated sugar
  • 1 1/2 cups farmers cheese
  • 1 - egg yolk
  • 1 teaspoon vanilla
  • 3/4 teaspoon grated lemon peel
  • APRICOT FILLING
  • 1 can 12 ounce solo apricot cake and pastry filling.
  • MAKE DOUGH
  • 1 teaspoon instant yeast
  • 1/2 teaspoon salt
  • 2 1/2 tablespoons granulated sugar
  • 2 tablespoons butter
  • 1/3 cup regular milk room temp.
  • 1 - egg room temp.
  • 1/2 teaspoon vanilla extract
  • 1 3/4 cups flour
  • STREUSEL TOPPING (OPTIONAL)
  • 1/4 cup brown sugar
  • 3 tablespoons butter
  • 4-5 tablespoons butter
  • 1/4 cup chopped walnuts

How To Make babka with apricot cheese filling

  • Step 1
    Grease a bowl and set aside. Put the sugar,salt,yeast,flour in a bowl. Combine well. Add milk,egg,vanilla,and butter,and mix on low with a beater with a dough hook,or knead the dough with your hands until it becomes and nice smooth ball of dough.This should take about 5 minute. Put in the greased bowl and cover. Let it rise for about an hour,or until dough doubles in size.
  • Step 2
    make the cheese filling by combining all ingredients in a bowl mixing on low speed until smooth.Set aside in refrigerator until dough is ready.
  • Step 3
    Take dough and place on a floured surface. Make a 24 inch x10-12 inch rectangle by rolling it.
  • Step 4
    Take solo Apricot filling and spread on the dough. Allow an inch all the way around rectangle to not have filling on it.
  • Step 5
    Spoon the cheese filling on top of the Apricot filling.If you have cheese filling left over that is fine. Fit as much filling on top as possible. Discard the rest. Roll the long end of dough jelly roll style to the middle of center. Then roll the other side of long side to meet up in the center.Turn the dough over so no seem is showing.
  • Step 6
    Now fold the left side to center,and then right side over like one folds a towel.Then twist it like a rope. Fit in to greased loaf pan.let it rise covered with saran wrap again until doubled in size. Put in a draft free area. make the streusel by combining all ingredients until it becomes a crumb mixture. Sprinkle on top of loaf. Place in 375 degree oven and bake for 50-55 min. until it is browned and not doughy. Remove from pan and cool completely on rack.
