applesauce oatmeal bread
I ran across a similar recipe on the King Arthur web site, but not having their exact ingredients, I substituted my own, and got this lovely loaf of tea bread. This is wonderful with butter, or with plain or flavored cream cheese.

Ingredients
- 1 cup organic sugar
- 2 large eggs
- 1/2 cup coconut oil
- 1 1/2 teaspoons vanilla flavor
- 1/2 cup whole wheat flour
- 1 cup all purpose flour
- 1/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 1/2 teaspoons cinnamon
- 1/4 teaspoon cloves
- 1/4 teaspoon nutmeg
- 1/2 teaspoon salt
- 1/2 cup rolled oats (uncooked oatmeal)
- 3/4 cup applesauce
- 1/2 cup chopped walnuts
- 2 tablespoons rolled oats for topping

Step 1Preheat oven to 350°F. In a large mixing bowl, mix together the sugar, eggs, coconut oil, and vanilla until mixture is creamy.

Step 2In a separate bowl, mix together the flours, baking powder, baking soda, spices, and salt. Add the dry ingredients to the wet ingredients in the mixing bowl. Blend in the rolled oats, applesauce, and walnuts. Place the mixture in a greased loaf pan. Press the 2 tablespoons of rolled oats evenly over the top of the batter. I used a long teabread-sized pan (12x4x3"), but a regular 9x5" loaf pan will also work.

Step 3Bake for 45-55 minutes, until a toothpick comes out clean when tested in the center of the loaf. Cool completely in the pan before slicing. * A 9x5" loaf pan may take an hour to bake.
