almond and honey cake.

I really like this cake , I love the combination of the honey and almonds together . I found this recipe in a booklet from one of my local grocery shops called Aldl. my family really likes it , as do I with a nice cup of coffee . so I hope you will like and enjoy also.. :)

Ingredients For almond and honey cake.

  • 110g
    butter, room temperature
  • 2 Tbsp
  • 1/4 c
    caster sugar
  • 1/4 c
    ground almonds
  • 200g
    plain flour
  • 1 tsp
    bicarbonate of soda
  • 1 tsp
    baking powder
  • 1/2 c
    natural yogurt( i got natural yogurt with a hint of lemon in it and it was lovely)
  • 2
    eggs ,plus 1 extra egg white .
  • 1
    handful of flaked almonds for top of cake.
  • little more honey to drizzle over top once baked.

How To Make almond and honey cake.

    Pre-heat the oven to 180c/350f. Grease a loaf tin and line with a strip of baking parchment that overhangs each end .

    Put butter, honey, caster sugar, ground almonds, shift flour, baking powder, bicarbonate of soda and natural yogurt into a large mixing bowl. Put egg whites into an other wee bowl. Put the yolk and the remaining whole egg in with all the other ingredients . Mix altogether with an electric hand held mixer .

    Whisk the egg whites until stiff.

    Stir in the egg whites to your mixture with a specular, gently folding in .

    Pour your cake mixture into the prepared loaf tin , scatter over the flaked almonds on top of cake.Bake in the pre-heated oven 180c/350f for 50 minutes on middle shelf of oven.

    Now after the first 30 minutes of the cake in the oven , just put some tinfoil over the top to prevent from over browning . Once ready remove from oven , and you can drizzle a little more honey over the top of cake while it is still warm. Then cool in tin for 15 minutes then remove from tin and leave to cool on a wire rack.
