These are very moist. No need to add sugar, the corn sweetens it. I have also added green chiles or chopped jalapenos and cheese.

    self rising buttermilk cornmeal mix
  • 3/4 c
    self rising flour
  • 2
    eggs, beaten
  • 1/2 c
    vegetable oil
  • 1 c
    sour cream
  • 1 c
    cream style corn

How to Make Pattycake's Corn Muffins


  1. Preheat oven to 375. Grease a muffin tin.
  2. Mix all ingredients.
  3. Fill 12 muffin tins 2/3 full.
  4. Bake for 18-20 minutes
