These are very moist. No need to add sugar, the corn sweetens it. I have also added green chiles or chopped jalapenos and cheese.

  • 1 cup self rising buttermilk cornmeal mix
  • 3/4 cup self rising flour
  • 2 - eggs, beaten
  • 1/2 cup vegetable oil
  • 1 cup sour cream
  • 1 cup cream style corn

  • Step 1
    Preheat oven to 375. Grease a muffin tin.
  • Step 2
    Mix all ingredients.
  • Step 3
    Fill 12 muffin tins 2/3 full.
  • Step 4
    Bake for 18-20 minutes
