mozzarella dill rolls
I love fresh herbs. I came across some fresh organic dill for $1.29 for a huge bunch. I bought one and made my entire Father's Day meal with fresh dill in everything. No complaints! These rolls are amazing, and they smell as good as they taste.

If you love fresh dill, these mozzarella dill rolls are for you. The rolls are light, fluffy, and full of flavor. Mozzarella cheese, onions, and garlic add a savory flavor to the dinner rolls accented by pops of fresh dill. Brushing with a dill butter makes the final product nice and buttery. We served them warm with a cup of soup and they were amazing.

Ingredients
- 1 1/2 teaspoons active dry yeast
- 1 teaspoon granulated sugar
- 2 tablespoons warm water
- 2 1/4 cups bread flour
- 1/4 teaspoon salt
- 1/2 cup plus 2 Tbsp warm milk
- 1 cup freshly grated mozzarella cheese
- 1 large egg
- 9 tablespoons butter, melted, divided
- 4 tablespoons fresh dill, divided
- 1/2 medium onion, diced
- 2 - 3 cloves garlic, minced
- 1 teaspoon sea salt
How To Make mozzarella dill rolls
-
Step 1Combine the yeast, sugar, and warm water in a small mixing bowl. Set aside for ten minutes at room temperature to allow the yeast to be proven. You should see bubbles forming at the surface.
-
Step 2Whisk the bread flour and salt in the bowl of an electric mixer.
-
Step 3Attach the dough hook and slowly add the yeast mixture to the flour.
-
Step 4Then add in this order while the dough hook is slowly turning - milk, mozzarella cheese, egg, and 1 Tbsp of melted butter.
-
Step 5Add 2 Tbsp of dill.
-
Step 6Add the onion and garlic. Mix on medium speed for 7 minutes. The dough should release from the side of the bowl and come together. Knead the dough lightly with your hands.
-
Step 7Transfer the dough to a lightly greased bowl. Cover with plastic wrap or a towel. Place in a warm place to rise for 20 minutes.
-
Step 8Roll into balls. Place on a cookie sheet and allow the dough to rise in a warm place for 20 minutes. Preheat the oven to 350 degrees F.
-
Step 9While the bread is rising, stir 2 Tbsp of dill into the remaining 8 Tbsp of melted butter. Set aside.
-
Step 10Brush the bread with the dill butter.
-
Step 11Sprinkle the rolls with sea salt.
-
Step 12Bake in the preheated oven for 15 - 20 minutes, basting the rolls a few times with the dill butter during the baking process.
