I had some overly ripe banana's needing used, so these delicious muffins were my end result...

  • 1/2 c
    softened, butter- room temp
  • 3
    mashed, banana's
  • 2 c
  • 1 tsp
    baking soda
  • 1/2 tsp
  • 1/2 c
    chopped nuts - i used walnuts

How to Make Tasty Banana Nut Muffins


  1. Preheat oven to 350 degree F.

    Line muffin tin with cupcake liners.
  2. In a bowl, cream the sugar, egg and butter together, until fluffy.

    Add all remaining ingredients and mix only until dry ingredients are incorporated.
  3. I scooped close to 1/4 cup of batter into each liner. I sprinkled each with a little sugar.

    Place in oven and bake for30 minutes or until pick comes out clean.
  4. These muffins freeze nicely as well...if they last that long!
