Ingredients
- 1 1/2 cups all purpose flour
- 1 teaspoon ground cinnamon, cloves, ginger, nutmeg for filling
- 1/2 cup brown sugar, lightly packed for filling
- 2/3 cup brown sugar
- 2 large eggs
- 1/2 cup butter softened
- 1 1/2 teaspoons vanilla extract
- 1 3/4 teaspoons baking powder
- 1/2 cup milk
- 1/4 cup white wine or apple juice (optional)
- 4 medium apples peeled and chopped
- 8 ounces cranberries fresh or frozen
- 1/3 cup butter to fry apples & cranberries in pan
How To Make spiced apple cranberry muffins

Step 1Preheat oven to 350 degrees Grease and flour 12 muffin cup tin

Step 2Mix brown sugar and spices together in a bowl and set aside Peel and chop the apples and and put into the fry pan with the butter, brown sugar and white wine or apple juice. Heat on medium and stir until softened then add the cranberries. Beat white sugar and butter together until smooth and creamy

Step 3Beat sugar and butter together until smooth and creamy.

Step 4Beat in eggs 1 at a time and add vanilla Combine flour and baking powder together in another bowl and stir into creamed butter mixture

Step 5Mix milk into batter until smooth Pour half the batter into muffin cups Add half the apples and half the cinnamon mixture Lightly pat the apple and cinnamon mixture into the batter

Step 6Pour the remaining batter over the apple layer Top with remaining apples and add more brown sugar mixture Bake for 30 - 40 minutes
