Muffin Tin Eggs

Very tasty!!

I had these at a meeting at work. Black forest ham was used.

I hope you enjoy these as much as the crew and I did.

Not just for breakfast. Can also have for brunch.

muffin tin pan, sprayed
thin sliced ham slices
1 can rotel tomatoes, drained
grated cheddar cheese


1Spray each muffin tin well with non-stick spray.
2Place a slice of ham in bottom of each muffin well.
3Place 1 tablespoon of tomatoes on top of ham.
4Sprinkle with favorite grated cheddar cheese over tomatoes.
5Break 1 egg into each well.
6Sprinkle with desired amount of salt and pepper.
7Bake @ 350 for 18-20 minutes or until the yolks are as firm as desired and whites are cooked through.
