Ingredients

egg
1/4 c
milk
1/4 c
sour cream
1/4 c
vegetable oil
1 1/2 c
all purpose flour
1/2 c
sugar
1/2 tsp
salt
2 tsp
baking powder
1 tsp
cinnamon
1 c
chopped, peaches - fresh or frozen
cinnamon
& sugar mixture for the tops - optional

How to Make Just Peachy Muffins / Cassies

Step-by-Step

  • 1Preheat oven to 350 degree F.

    Line a muffin pan with paper muffin cups or spray with non stick cooking spray.
  • 2In a bowl, beat egg; add milk, sour cream and oil.
  • 3Combine flour, sugar, baking powder, cinnamon and salt.
  • 4Stir into the egg mixture just until moistened. Stir in the peaches.
  • 5Fill greased or paper-lined muffin cups three-fourths full. ( sprinkle tops with cinnamon/sugar mixture - optional). I just spray my pan...they pop right out.
  • 6Bake for 20-25 minutes or until a toothpick inserted in a muffin comes out clean.

    I have also made a peach glaze for the tops out of preserves, that was yummy.
