Love these tender muffins with a cup of coffee in the mornins... Photos are mine.

Ingredients

  • 1 - egg
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1/4 cup vegetable oil
  • 1 1/2 cups all purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 cup chopped, peaches - fresh or frozen
  • cinnamon - & sugar mixture for the tops - optional

How To Make just peachy muffins / cassies

  • Step 1
    Preheat oven to 350 degree F. Line a muffin pan with paper muffin cups or spray with non stick cooking spray.
  • Step 2
    In a bowl, beat egg; add milk, sour cream and oil.
  • Step 3
    Combine flour, sugar, baking powder, cinnamon and salt.
  • Step 4
    Stir into the egg mixture just until moistened. Stir in the peaches.
  • Step 5
    Fill greased or paper-lined muffin cups three-fourths full. ( sprinkle tops with cinnamon/sugar mixture - optional). I just spray my pan...they pop right out.
  • Step 6
    Bake for 20-25 minutes or until a toothpick inserted in a muffin comes out clean. I have also made a peach glaze for the tops out of preserves, that was yummy. Enjoy!
