  • 1/4 c
    sour cream
  • 1/4 c
    vegetable oil
  • 1 1/2 c
    all purpose flour
  • 1/2 c
  • 1/2 tsp
  • 2 tsp
    baking powder
  • 1 tsp
  • 1 c
    chopped, peaches - fresh or frozen
  • cinnamon
    & sugar mixture for the tops - optional

How to Make Just Peachy Muffins / Cassies


  1. Preheat oven to 350 degree F.

    Line a muffin pan with paper muffin cups or spray with non stick cooking spray.
  2. In a bowl, beat egg; add milk, sour cream and oil.
  3. Combine flour, sugar, baking powder, cinnamon and salt.
  4. Stir into the egg mixture just until moistened. Stir in the peaches.
  5. Fill greased or paper-lined muffin cups three-fourths full. ( sprinkle tops with cinnamon/sugar mixture - optional). I just spray my pan...they pop right out.
  6. Bake for 20-25 minutes or until a toothpick inserted in a muffin comes out clean.

    I have also made a peach glaze for the tops out of preserves, that was yummy.
