Ingredients
- 1 - egg
- 1/4 cup milk
- 1/4 cup sour cream
- 1/4 cup vegetable oil
- 1 1/2 cups all purpose flour
- 1/2 cup sugar
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1 cup chopped, peaches - fresh or frozen
- cinnamon - & sugar mixture for the tops - optional
How To Make just peachy muffins / cassies

Step 1Preheat oven to 350 degree F. Line a muffin pan with paper muffin cups or spray with non stick cooking spray.

Step 2In a bowl, beat egg; add milk, sour cream and oil.

Step 3Combine flour, sugar, baking powder, cinnamon and salt.

Step 4Stir into the egg mixture just until moistened. Stir in the peaches.

Step 5Fill greased or paper-lined muffin cups three-fourths full. ( sprinkle tops with cinnamon/sugar mixture - optional). I just spray my pan...they pop right out.

Step 6Bake for 20-25 minutes or until a toothpick inserted in a muffin comes out clean. I have also made a peach glaze for the tops out of preserves, that was yummy. Enjoy!
