These are really easy to make and a good breakfast muffin with the jam inside. This technique can be used for any muffin to add a nice surprise. It's easy to put different flavours in, to please everyone. A big hit with family and friends.

Ingredients

  • 3/4 cup - sugar
  • 1/2 cup - butter or margarine
  • 1 - egg
  • 2 - bananas, mashed
  • 1 tsp - vanilla
  • 1 tsp - baking soda
  • 1/2 tsp - cinnamon
  • 1 1/2 cups - flour
  • - favourite flavour jam

How To Make jam burst banana muffins

  • Step 1
    Beat sugar and butter or margarine together. Beat in egg and vanilla. Add baking soda, cinnamon and flour. Mix well. Beat in bananas.
  • Step 2
    Line a large muffin tin with paper cups. Fill muffin cup 1/2 full. Make a well in the batter, without seeing the bottom of the cup, and leaving a small amount around the edges. Fill the well with jam, about 1 - 2 tsps of jam. Cover with batter until cup is 2/3 full. If the edges of the batter are not sealed, jam will leak out the sides as it cooks.
  • Step 3
    Bake at 350F in a preheated oven for 15 to 20 minutes or until a toothpick comes out clean of batter, and muffins are lightly golden. Remove from pan and let cool.
  • Step 4
    Sometimes instead of putting jam in the center, I stir chocolate chips in the batter.
