Jam Burst Banana Muffins

- 3/4 cup
- 1/2 cup
- butter or margarine
- bananas, mashed
- 1 tsp
- 1 tsp
- baking soda
- 1/2 tsp
- 1 1/2 cups
- favourite flavour jam
How to Make Jam Burst Banana Muffins
- 1Beat sugar and butter or margarine together. Beat in egg and vanilla. Add baking soda, cinnamon and flour. Mix well. Beat in bananas.
- 2Line a large muffin tin with paper cups. Fill muffin cup 1/2 full. Make a well in the batter, without seeing the bottom of the cup, and leaving a small amount around the edges. Fill the well with jam, about 1 - 2 tsps of jam. Cover with batter until cup is 2/3 full.
If the edges of the batter are not sealed, jam will leak out the sides as it cooks.
- 3Bake at 350F in a preheated oven for 15 to 20 minutes or until a toothpick comes out clean of batter, and muffins are lightly golden. Remove from pan and let cool.
- 4Sometimes instead of putting jam in the center, I stir chocolate chips in the batter.
