Ingredients
- 1 cup flour
- 1 cup yellow cornmeal
- 1/4 cup sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 - eggs, beaten
- 1 cup low-fat sour cream
- 1/4 cup melted butter
- 1/2 cup diced bell peppers (can use hot peppers, too)
- 1/4 cup corn kernels
- 2 - scallions, chopped
How To Make confetti corn muffins

Step 1Pre-heat oven to 400. Mix first 6 ingredients in a bowl.

Step 2Stir in eggs, sour cream and butter until just blended.

Step 3Fold in peppers, corn and scallions.

Step 4Spoon batter into well-greased muffin pan. Bake 15 - 18 minutes or until done.
