sugar
1 Tbsp
butter, room temperature
1/2 c
brown sugar, firmly packed
3 Tbsp
instant coffee powder
2 tsp
vanilla extract
1 3/4 c
flour
1 Tbsp
baking powder
1/2 tsp
salt
2
eggs
2/3 c
milk
1 1/2 c
walnuts, coarsely chopped
3/4 c
semi-sweet chocolate chips

How to Make Coffee Walnut Chocolate Chip Muffins

Step-by-Step

  • 1Heat oven to 350°F Line twelve muffin cups with paper muffin cup liners.
  • 2Beat butter, sugar, brown sugar, coffee and vanilla in large bowl until creamy. Stir together flour, baking powder and salt. Beat together eggs and milk; add alternately with flour mixture to butter mixture, stirring just to combine. Stir in walnuts and chocolate chips. Fill muffin cups 1/2 full with batter.
  • 3Bake 20 to 25 minutes. Cool 5 minutes; remove from pans to wire rack. Cool completely.
