1/2 stickbutter softened
4ozcream cheese softened
1 call purpose flour
1 tspbaking powder
2 cfresh or frozen blueberries (if fresh,wash then dry berries on a paper towel)
2 Tbspflour for tossing on blueberries
·lemon sauce (recipe below) or powdered sugar
How to Make Blueberry Coffee Cake with Lemon Sauce
- Stir all ingredients (except blueberries) together in a large bowl.
- Sprinkle 2 tablespoons of flour over blueberries and toss gently to cover. (this keeps the blueberries from going to the bottom of the cake.)
- Gently fold blueberries into the cake batter.
- Pour mixture into sprayed(pam) baking dish.
Bake 30-35 minutes or until tester(toothpick) comes out clean.
Cool then dust with powdered sugar or drizzle with Lemon Sauce. (optional) RECIPE BELOW
- Lemon Sauce:
1/2 cup sugar
4 1/2 tsp cornstarch
1 tsp grated lemon peel
1 cup water
1 tbls butter
2 tbls lemon juice
In a sauce pan combine sugar, cornstarch, lemon peel.
Gradually add water until blended.
cook and stir for 2 minutes
Remove from heat and stir in butter and lemon juice.
This can also be kept in the refrigerator and heated in the microwave when needed.
