blueberry breakfast muffins

Lots of blueberries but no flour, or oil in the pantry. Used what I had and these were a hit with the family. Now my go to muffins when blueberries come into season.

Ingredients
- 1 - banana, mashed
- 1 - egg
- 1 cup yogurt, plain
- 1/3 cup sugar
- 3 cups all purpose baking mix
- 1 1/2 cups blueberries, fresh or frozen
How To Make blueberry breakfast muffins

Step 1Combine mashed banana, egg, yogurt, and sugar together.

Step 2In small bowl measure out 1/4 cup of the baking mix. Add blueberries to this and gently toss to coat.

Step 3Add the remaining 2-3/4 cups baking mix to the banana-egg mixture and quickly combine without over-mixing. The mixture will begin rising immediately. Don't beat it down.

Step 4Fold in the coated blueberries and any remaining baking mix.

Step 5Fill paper lined baking cups 2/3 full and bake at 400 degrees F. for 20-22 minutes. Makes approximately 24 muffins
