Since I like to eat something quick to go with my first cup of coffee, early in the morning, I bake muffins on a regular basis (about every other morning). It's not unusual for me to be up at 6:00 a.m. and baking muffins! This Winter I've become hooked on making muffins often, especially with apples and walnuts or with banana and walnuts. We're fond of nuts in our muffins! I also don't want a lot of sugar and a cake-like muffin, I want a chewy muffin with crunch and lots of flavor.

Ingredients

  • 1&!/2 cup all purpose flour
  • 1/3 cup light brown sugar
  • 1 & 1/2 cups old-fashioned rolled oats
  • 1 tablespoon baking powder
  • 1 - egg
  • 1 - mashed banana
  • 1 cup milk
  • 1 tablespoon vegetable oil
  • 1/2 cup chopped walnuts

How To Make banana nut & oatmeal muffins-bakintime

  • Step 1
    Spray muffin pan with canola oil (PAM); and preheat oven to 425 degrees.
  • Step 2
    Place dry ingredients in a medium bowl, stir to blend.
  • Step 3
    Combine egg, oil, milk and mashed banana in a small bowl.
  • Step 4
    Add wet ingredients to dry ingredients and stir until combined, and then add walnuts.
  • Step 5
    Using an ice cream scoop, spoon batter into muffin cups.
  • Step 6
    Makes twelve medium muffins. Bake for 20 minutes. Cool five minutes and remove from muffin pan. Serve warm or cool and freeze. May be warmed in microwave in 20-25 seconds for a quick breakfast.
