These are really good. You can add chopped walnuts or pecans. Also to the cinnamon lovers, you can add a little cinnamon to the batter also.

Ingredients

  • ·
    1 1/2 cups all purpose flour
  • ·
    1 teaspoon baking soda
  • ·
    1 teaspoon baking powder
  • ·
    1/2 teaspoon salt
  • ·
    3 large ripe bananas; mashed
  • ·
    3/4 cup sugar
  • ·
    1 whole egg; lightly beaten
  • ·
    1/3 cup butter; melted
  • TOPPING

  • ·
    1/3 cup brown sugar
  • ·
    1 tablespoon all purpose flour
  • ·
    1/8 teaspoon ground cinnamon
  • ·
    1 tablespoon butter

How to Make Banana Crumb Muffins

Step-by-Step

  1. In a large bowl combine dry ingredients. Combine bananas, sugar, egg and butter and mix well. Stir into dry ingredients until just moistened.
  2. Fill greased or paper line muffin cups 3/4 full.
  3. Combine 1st three topping ingredients and cut in butter until crumbly and sprinkle over muffins.
  4. Bake at 375 degrees for 18 - 20 minutes or until test done. Cool in pan 10 minutes before removing.
