Adapted from a blog, but she got the recipe from a cookbook while she was on vacation in italy.

Ingredients
- 2 1/2 cups chickpea or garbanzo flour
- 3 1/2 cups cold water
- - salt
- - pepper
- 1/4 cup olive oil, extra virgin
How To Make chickpea flat bread

Step 1Place flour in a bowl. Whisk flour while adding water to prevent lumps. Whisk until smooth. Let sit on counter about 3 hours.

Step 2Preheat oven to 350 degrees. Pour olive oil into large rimmed cookie sheet. Don't skimp on the oil. Pour batter onto sheet to about 1/4" thick.

Step 3Bake 30 minutes. Let cool a few minutes before cutting. Good served with pesto or parmesan. To rewarm leftovers, broil a few minutes.
