This is a traditional Russian recipe for a classic biscuit (cookie) made from flour flavoured with spices, honey, orange zest and almonds that's bound with eggs and oven baked until crisp. Found at Celtnet.

Ingredients

  • 560 grams unbleached plain flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 200 grams icing sugar
  • 2 teaspoons baking powder
  • 2 - extra large eggs
  • 240 milliliters runny honey
  • 2 tablespoons orange zest chopped finely
  • 1 - large egg, beaten with a little water
  • 20 - blanched almonds
  • - coarse sugar crystals to dust

How To Make russian medianyky (honey biscuits)

  • Step 1
    Sift together the flour, spices, sugar and baking powder into a bowl.
  • Step 2
    Mix with a fork to blend thoroughly then add the eggs, honey and orange peel. Stir well and bring together as a soft dough.
  • Step 3
    Turn onto a floured work surface then roll the dough out to about 12mm thick (flour your rolling pin to make this easier). Cut into squares with a pastry cutter then transfer to a lightly-greased non-stick baking tray.
  • Step 4
    Brush each one with the egg wash then scatter the sugar crystals on top. Place almonds on top.
  • Step 5
    Transfer the biscuits to an oven pre-heated to 170°C and bake for about 15 minutes, or until golden and cooked through. Transfer to a wire rack to cool before storing in an air-tight tin.
