petra's biscuit cinnamon rolls with icing
I am not sure when I created/modified my mom's cinnamon rolls. But whatever I did to them, it made it a family favorite! Many of our friends love them too. Enjoy!

These biscuit cinnamon rolls are not your typical cinnamon rolls, but they're delicious. It's the perfect recipe if making a dough with yeast intimidates you. The biscuit-type dough is buttery, sweet, and slightly dense. A cinnamon and butter filling oozes from the rolls. On top is a light and creamy frosting that brings a nice touch of sweetness. These are not as pretty and put together as traditional cinnamon rolls, but they are easier to make and just as yummy. The cinnamon rolls recipe makes about 2 dozen, so great for a crowd. But it can easily be cut in half for just your family.
Ingredients
- DOUGH
- 6 - 8 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup baking powder
- 2 teaspoons salt
- 1/2 cup softened butter
- 4 cups milk, approximately
- BROWN SUGAR FILLING
- 1 cup butter
- 2 cups packed brown sugar
- 2 tablespoons ground cinnamon
- 1 teaspoon vanilla extract
- ICING (OPTIONAL)
- 1/2 cup butter
- 1 1/2 cups powdered sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract
How To Make petra's biscuit cinnamon rolls with icing

Step 1Preheat oven to 350 degrees F. Mix the dry ingredients for the dough in a large mixing bowl.

Step 2Cut in softened butter until it resembles sand.

Step 3Slowly mix in the milk a little at a time until it becomes a sticky dough.

Step 4Turn out onto a well-floured surface and knead until no longer sticky.

Step 5Divide the dough into two.

Step 6Roll out into a rectangle.

Step 7Make the filling. Melt the butter in a saucepan over medium heat. Add brown sugar, cinnamon, and vanilla extract. Stir well.

Step 8Spread half of the filling all over the dough, leaving a 1/2 inch perimeter.

Step 9Roll from one end to the other.

Step 10Slice rolls with a thickness of 1 1/2 inches; about 12 per roll.

Step 11Place on a parchment paper-lined cookie sheet. Repeat with the other half of the dough.

Step 12Bake for 20 minutes at 350 degrees or until the dough is brown-tan on top. Serve hot or cold. Top with icing.

Step 13For the icing, melt butter over low and medium heat. Add powdered sugar and vanilla. Stir until all the sugar is in the butter. Add milk and stir.

Step 14Drizzle over warm rolls. If the icing stiffens, heat it back up, and it will drizzle nicely.
