I named these "Mistaken Biscuits" because I needed to make biscuits to go with a stew. I did not have baking powder or cream of tarter and barely had enough milk in the house to do most recipes. After some research, i took a basic biscuit recipe and used the lemon juice to create the acid needed to extend the leavening through the baking process. During the making, I forgot to add the butter (which wasn't really needed after all) and discovered they are more like rolls instead of the drop biscuits they look like. Hence the name "Mistaken Biscuits".

Ingredients

  • 2 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup milk
  • 1 teaspoon lemon juice

How To Make mistaken biscuits

  • Step 1
    Preheat oven to 450F.
  • Step 2
    Combine all dry ingredients and mix well.
  • Step 3
    Add lemon juice to the cup of milk.
  • Step 4
    Add milk mix to dry ingredients and mix to form dough.
  • Step 5
    Drop dough on an ungreased cookie sheet.
  • Step 6
    Bake for 7-12 minutes, until lightly browned.
