~ man pleasin breakfast ~ cassies

This breakfast was on the menu and a favorite of many hungry men, at the restaurant I used to manage. It is sure to please. Women love it too, but always asked for 1/2 a serving. I hope you try it sometime. A true comfort meal, that I serve for dinner too, it's not just for breakfast. Enjoy!

Ingredients

  • 4 - eggs - over easy is the best
  • oil - for browning meat & veggies
  • 1/2 pound bulk sausage
  • 1/4 cup each - red & green bell pepper, diced
  • 1/2 cup diced, onion
  • 1 small - medium pre cooked potato, small diced - didn't add this time
  • salt - & pepper to taste
  • 2 large biscuits - prepared - i use home made or grands
  • GRAVY
  • 2 tablespoons each - butter & flour
  • 1 1/4 cups milk - more if to thin if needed
  • fresh - cracked pepper & kosher salt to taste
  • fresh - shredded, cheddar cheese

How To Make ~ man pleasin breakfast ~ cassies

  • Step 1
    Have biscuits prepared and keep warm. In a medium skillet over medium heat, add oil. Once hot crumble sausage into skillet and add the onions, peppers, potato if using, salt and pepper to taste. Saute until meat is no longer pink and veggies are browning and tender. Keep warm while making gravy.
  • Step 2
    In a medium saucepan over medium heat, melt butter. Once bubbling, whisk in the flour and continue cooking for 1 - 2 minutes, do not burn. Whisk in the milk and continue whisking as it comes to a boil and thickening. Season with cracked black pepper and salt. Remove from burner. May need to add a little more milk as it tends to thicken as it sits.
  • Step 3
    Prepare 2 eggs for each biscuit. Over easy is really the best for this breakfast.
  • Step 4
    Now, on serving plate - Spread open 1 large biscuit - Spoon half of the sausage mixture evenly over biscuit.
  • Step 5
    Place 1 egg on each biscuit halve.
  • Step 6
    Ladle half the white gravy evenly over eggs.
  • Step 7
    Sprinkle with desired amount of cheese and microwave for 30 seconds to 1 minute or until cheese is melted. Season if desired - I sprinkle with pepper and hot pepper flakes and some fresh parsley. Time to dig in...it's delicious, quite filling and satisfying.
