Ingredients
- 1 cup all purpose flour
- 1 cup whole wheat flour
- 1/2 cup wheat germ
- 3 cups zucchini, shredded
- 1 tablespoon oregano, dried
- 1 tablespoon rosemary, dried
- 1 tablespoon garlic powder
- 1 tablespoon baking soda
- 1 tablespoon brown sugar
- 1 tablespoon salt
- 1 tablespoon cracked pepper
- 1/4 cup butter
- 1 cup red onion, chopped
- 2 cups sharp cheddar, shredded
- 2 - eggs
- 1/4 cup water
- 1/2 cup greek yogurt
How To Make zucchini cheddar biscuits

Step 1Preheat oven to 400F

Step 2In a bowl combine dry ingredients (flours, wheat germ, baking powder, herbs, garlic powder, brown sugar, salt and pepper).

Step 3Melt butter in fry pan, saute onions until soft but not browned. Combine onions (and butter) with dry ingredients.

Step 4Add zucchini and combine.

Step 5Add eggs, water and greek yogurt and combine.

Step 6Add cheddar cheese and combine.

Step 7On a pre-greased (I use PAM) baking sheet arrange spoonfuls of mixture in golf ball sized portions, allowing enough space for the batter to spread approximately twice the size of the original ball.

Step 8Bake for 40 minutes or until a deep golden brown. Makes approximately 36 biscuits.
