kat's sweet potatoe yeast dinner rolls

This is because i had leftover mashed sweet potatoes from dinner, i didn't want to throw them out so i had to think of something to do with them and this is what i got

Ingredients

  • 1 1/2 cups cooked mashed sweet potatoes( cooled to room temp)
  • 1/2 teaspoon nutmeg
  • 3 teaspoons cinnamon
  • 1 teaspoon salt
  • 3/4 cup sugar
  • 1/2 cup milk
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons (small package) dry active yeast
  • 1/4 cup warm water
  • 1/2 cup shortening
  • 1 teaspoon baking powder

How To Make kat's sweet potatoe yeast dinner rolls

  • Step 1
    in a small cup add yeast to the warm water, stir and let sit about 5 minutes, in a large bowl sift flour, baking soda, salt, sugar, cinnamon and nutmeg together, cut in shortening, add milk, sweet potatoes and yeast to flour, stir together well
  • Step 2
    Flour area to roll and knead, place dough in center and knead, roll out to about 1/4 thick and using a medium or small biscuit cutter cut out rolls, place on a greased cookie sheet and bake in a 4oo degree preheated oven for 12-15 minutes, turn oven to broil and slightly brown the tops , remove from oven and brush top with melted butter
  • Step 3
    They do not rise as much as a yeast roll does, but they sure do taste good
