whole wheat flour
1/2 c
unbleached white flour
2 tsp
baking powder
1/2 tsp
3 Tbsp
1/3 c
apple juice
1 c
sweet potatoes, boiled, peeled and mashed
3 Tbsp
1/3 c
finely chopped walnuts or pecans

How to Make Sweet Potato Biscuits


  • 1Preheat oven to 425.
  • 2In a mixing bowl, sift together the flours, baking powder and salt.
  • 3Work in the butter until the mixture resembles coarse breadcrumbs.
  • 4Add apple juice, potato, honey and nuts and work until it resembles a soft dough.
  • 5Turn dough out onto a well-floured board and knead enough extra flour to make the dough lose its stickiness.
  • 6With floured hands, divide dough into 16 equal parts.
  • 7Shape into small balls and arrange on a lightly oiled cookie sheet, patting them down a bit to flatten them.
  • 8Bake for 12 to 15 minutes.
  • 9Serve hot with Creamy Mushroom Soup.
