sweet potato biscuits

A friend is making a Thanksgiving brunch and asked me for some ideas.This is one of the recipes I gave her ,I usually make sweet potato biscuits when I have left over sweet potatoes from making pies.My family likes to make sandwiches with sliced ham and sweet potato biscuits. I usually pat my biscuit dougn in a rectangle and cut into squares.

Ingredients

  • 1 cup all purpose flour
  • 3 teaspoons baking powder
  • 2 teaspoons brown sugar
  • 1 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 3 tablespoons shortening
  • 3/4 cup cooked mashed sweet potatoes
  • 1/4 cup milk

How To Make sweet potato biscuits

  • Step 1
    Preheat the oven to 400 degrees In a medium bowl, stir together the flour, baking powder, sugar,salt and nutmeg. Cut in the shortening until pieces of shortening are pea-sized or smaller. Mix in the sweet potatoes, and enough of the milk to make a soft dough. Turn dough out onto a floured surface, and pat out to 3/4 inch thickness. Cut into circles using a biscuit cutter or cut into 2 inch squares. Place biscuits 1 inch apart onto a greased baking sheet. Option:brush melted butter on top of biscuits and sprinkle with cinnamon sugar. Bake for 12 to 15 minutes in the preheated oven, or until golden brown.
