Ingredients
- 1 cup cooked, mashed, and cooled sweet potatoes (from 1 large sweet potato)
- 3/4 cup milk
- 1/2 cup sugar
- 1 - egg, beaten
- 1 tablespoon butter, melted
- 3 cups flour
- 1 tablespoon plus 2 1/2 teaspoons, baking powder
- 1 1/4 teaspoons salt
- 1/2 cup vegetable shortening
How To Make sweet potato biscuits

Step 1In a bowl mix together, sweet potatoes, milk, sugar, egg, and the melted butter.

Step 2In a separate bowl, whisk together the flour, baking powder, and salt. With a pastry cutter, cut the shortening into the flour mixture.

Step 3Pour the sweet potato mixture into the flour mixture. Mix until just combined. Do not over mix!

Step 4Using a large spoon, drop onto baking sheets. Bake in a preheated, 400 degree oven, for 17 minutes, or until golden.

Step 5These are delicious served warm, with butter and honey!
