My English cousin used to make these regularly for tea-time and I'm afraid they lived up to their name! You could peg a squirrel with one of her rock cakes and it would never bother your cherry or plum tree again!

Ingredients

  • 1/2 lb
    flour
  • 1/2 tsp
    baking powder
  • 1-1/2 oz
    butter, room temperature
  • 1-1/2 oz
    sugar
  • 2 oz
    currants or sultanas
  • 1
    egg
  • a little
    milk

How to Make Rock Cakes

Step-by-Step

  1. Beat the butter into the flour, then add rest of dry ingredients and currants.
  2. Mix to stiff dough with well-beaten egg and milk.
  3. Bake in fairly hot oven 15 minutes.
