oh so easy cinnamon-apple-cranberry bread

My 3 grand kids & I were looking to make "something that tastes like Fall." according to the 12 yr old, lol. Since i was running low on certain baking products, I rounded up what I could & we ended up making these & serving w/ homemade apple cider. All I can say is..." the mice must of ate them, because there aren't any left." Again, words from the 12 yr old!!

Ingredients For oh so easy cinnamon-apple-cranberry bread

  • 1 can
    16 oz-jumbo biscuits, i used pillsbury southern style
  • 1 lg
    granny smith apple, peeled, cored and diced
  • 2 tsp
    ground cinnamon
  • 1-1/2 Tbsp
    sugar
  • 2 tsp
    packed light brown sugar
  • 4 Tbsp
    melted butter
  • 1/2 c
    dried cranberries, or more depending on your preferences
  • 1/2 c
    powdered sugar
  • 1 tsp
    vanilla
  • 4-6 tsp
    milk

How To Make oh so easy cinnamon-apple-cranberry bread

    In medium bowl, mix together 1-1/2 tbsp sugar, cinnamon and brown sugar. Place 1/2 of the cinnamon-sugar mix into another small bowl and add the apples. Mix to coat.

    Open the can of biscuits and cut each one into 1/2 lengthwise. Place the melted butter in a small bowl and dip each biscuit half into butter. Then dip in the medium bowl of cinnamon-sugar mix. Spray a loaf pan w/ cooking spray and stack the biscuit halves in rows.

    Spoon the apple-cinnamon-sugar mix in between the biscuits. Then spoon the dried cranberries right in there w/ the apple mix. Drizzle w/ remaining melted butter. Sprinkle the remaining cinnamon-sugar mix over all. Bake about 25 minutes or until everything is looking light brown. Take out of oven & let cool. In medium bowl, whisk together powdered sugar, vanilla and milk, ( using more or less milk, depending on the consistency you're looking for,) and then drizzle over all the biscuits. Eat these when warm & make sure to have a napkin to catch the drool!
