Growing up in NJ this was a favorite of mine at any pizza place! Hard to find in Texas, so again, had to learn to make them myself. This recipe starts with Freda Gable's Easy Yeast Rolls by Freda. Easy Yeast Rolls by Freda
The pefect roll for a fancy dinner, turned into a delicious regional appetizer by a displaced Jersey Girl.

Ingredients

  • GARLIC SAUCE

  • 1 stick
    butter
  • 1/4 c
    olive oil
  • 1/2 tsp
    salt
  • 2 Tbsp
    minced garlic
  • 1 tsp
    garlic powder
  • 1 tsp
    Italian seasoning
  • 1/2 tsp
    oregano
  • 1 Tbsp
    pizza seasoning (in seasons aisle)
  • 3 Tbsp
    parsley
  • RESERVE

  • 1/4 c
    grated parmesan cheese

How to Make New Jersey Style Garlic Knots

Step-by-Step

  1. First I have to give thanks to Freda Gable for her delicious Easy Yeast Rolls by Freda. My family wants them twice a week! I have to fight them off from eating them before we're ready to sit down for dinner. so, Thanks Freda!
  2. First -- Melt the butter and olive oil in a medium sized bowl. mix other ingredients into oil and wisk until well blended, split into 2 bowls. add 1/4 cup grated parmesan cheese to 2nd bowl.
  3. Next-- you print out Freda's recipe for Easy Yeast Rolls' by Freda, and follow it up to the point where you've risen the dough and punched it down. Now instead of cutting each quarter into 12 pieces you should cut them into 8 and roll them into 6 to 8 inch logs.
  4. then roll the log in the garlic sauce mixture, and tie in knot as in Freda's directions.
  5. I had help from my daughter, she cut and rolled the dough then handed it to me, I was then able to get the garlic sauce on my hands without worry of messing up the rolling of the dry dough. If I didnt have help I would have rolled them all into logs first then rolled into the garlic sauce next to keep my greasy hands from working the dough. The point isnt to work the sauce into the dough its to coat the dough with the sauce.
  6. bake for 20 minutes at 350 degrees.
  7. remove from oven and brush with remaining garlic sauce with cheese and serve with marinara sauce for dipping
    OR
    serve without brushing but put some marinara and some garlic sauce for 2 dipping sauces.
