This is an easy buttermilk biscuit recipe anyone can make. There is not a lot of shortening in these biscuits, so make sure to use full-fat buttermilk to add a little fat. Once baked, the outside gets crunchy, and the inside stays fluffy and tender. Since they're on the savory side, a smear of butter and sweet jam is a lovely contrast.

Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 2 tablespoons baking powder
- 1 tablespoon shortening
- 1/8 teaspoon baking soda
- 1 cup + 2 Tbsp full-fat buttermilk
- 1/2 cup oil

We kneaded the dough, with a touch of extra flour, about 4-5 times before cutting.

Step 1Sift flour, salt, and baking powder into a mixing bowl.

Step 2Add shortening and blend well.

Step 3Add baking soda to all the buttermilk.

Step 4Blend buttermilk mixture into flour mixture. DO NOT OVERWORK DOUGH.

Step 5Heavily flour surface and the top of the dough (it's pretty sticky). Roll out 1/4 thick and cut with a 2-inch biscuit cutter OR cut into squares.

Step 6Dip biscuits in oil to cover all sides.

Step 7Place on an oiled baking sheet immediately with all biscuits touching.

Step 8Bake at 500F for 8 -10 minutes or until nicely brown.

Step 9Serve with butter and jam.
