Mayonnaise Biscuits

toni coleman

My mother used to make these when she didn't want to go to all the trouble of making regular buttermilk biscuits. I've added an option that makes these taste as good as (or better) than biscuits offered at certain seafood chain resturants...

1 c
self rising flour (heaping)
2 Tbsp
(heaping) mayonnaise
1/3 c
milk (can be low fat or regular)

1Add flour, mayonnaise and part of the milk together in small mixing bowl; stir well. Continue to add milk until batter is thick but still lumpy - consistency should be that of a thick cake. Spoon into 6 tin muffin pan sprayed with non stick spray until half - three quarters full. Bake @ 400 until browned.
2Savory option: In addition to ingredients of basic biscuits, add 1 cup shredded cheddar cheese and 1/2 tsp garlic powder and mix well. Bake as before.

Can also add jalapenos if desired.
