lemon blueberry biscuits
Recipe from a Sister in Law years ago during an ice storm when they took us in because we had no power!

2 dozen small or 1 dozen large biscuits
Ingredients
- 2 cups all purpose flour
- 1/3 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 8 ounces lemon yogurt
- 1 - egg, beaten
- 1/4 cup melted margarine
- 1 teaspoon grated lemon peel
- 1 cup fresh of frozen blueberries
How To Make lemon blueberry biscuits

Step 1In a large bowl combine dry ingredients

Step 2In a medium bowl combine yogurt, egg, melted margarine and lemon peel.

Step 3Stir yogurt mixture into dry mixture until just moistened.

Step 4Carefully fold in blueberries. Mixture is thick so this isn't easy!

Step 5Drop by Tablespoon fulls onto greased (or lined with parchment paper) baking sheet.

Step 6Bake at 400 for 13-18 minutes depending on your oven. Until golden brown on top.

Step 7While they are baking, mix together: 3/4 cup powdered sugar 2-3 T lemon juice 1/2 t grated lemon peel

Step 8After cooling the biscuits on a cooling rack for a few minutes drizzle with the powdered sugar glaze.

Step 9Try not to eat all of them before the rest of the family knows they are done! :)
