Ingredients
- 1 1/4 cups flour
- 3/4 cup cornmeal
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup shortening
- 1 cup milk
- 1/2 cup monterey jack cheese with jalapenos, grated
How To Make jalapeno corn biscuits

Step 1Preheat oven to 450.

Step 2Grease 2 cookie sheets.

Step 3Lightly spoon flour into measuring cup; level off.

Step 4In large bowl, combine flour, cornmeal, baking powder and salt.

Step 5Using pastry blender or fork, cut in shortening until mixture resembles coarse crumbs.

Step 6Add milk and cheese; stir just until dry ingredients are moistened.

Step 7Drop dough by generous tablespoonfuls onto greased cookie sheets making about 18 biscuits.

Step 8Bake for 8 to 12 minutes or until light golden brown.

Step 9Serve warm.
