Ingredients

  • 1 1/4 cups flour
  • 3/4 cup cornmeal
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup shortening
  • 1 cup milk
  • 1/2 cup monterey jack cheese with jalapenos, grated

How To Make jalapeno corn biscuits

  • Step 1
    Preheat oven to 450.
  • Step 2
    Grease 2 cookie sheets.
  • Step 3
    Lightly spoon flour into measuring cup; level off.
  • Step 4
    In large bowl, combine flour, cornmeal, baking powder and salt.
  • Step 5
    Using pastry blender or fork, cut in shortening until mixture resembles coarse crumbs.
  • Step 6
    Add milk and cheese; stir just until dry ingredients are moistened.
  • Step 7
    Drop dough by generous tablespoonfuls onto greased cookie sheets making about 18 biscuits.
  • Step 8
    Bake for 8 to 12 minutes or until light golden brown.
  • Step 9
    Serve warm.
