My sister Lorraine, who's an Irish chef sent me this recipe and they're really delicious. You can experiment with the fruit using candied mixed fruit or raisins or cherries or all of them!! In Ireland we don't usually eat them with clotted cream, that's more of an English thing!

Ingredients

  • 600 grams flour, self raising
  • 180 grams butter, cold
  • 1 tablespoon baking powder
  • 500 milliliters buttermilk
  • 1 teaspoon salt
  • 100 grams sugar
  • 1 package candied mixed fruit

How To Make irish scones

  • Step 1
    Place flour, sugar, salt and baking powder in a bowl, mix.
  • Step 2
    Cut in cold butter (or margarine) , use your fingers to break up butter until it resembles breadcrumbs. Add mixed fruit and mix lightly.
  • Step 3
    Add buttermilk, start mixing with fork until dough starts to form, then turn out on to floured surface. Knead gently, just enough to bring ingredients together in a ball shape, then pat down to make a flat circle, about 1 inch thick. Using a cutter or a glass if you don't have one, just dip the glass in flour so that your scones drops out easily.
  • Step 4
    Place the scones on a baking tray lined with parchment paper, brush with egg wash and sprinkle a little sugar on each. Bake for 20 minutes, 180 degrees with fan or until they have a nice golden colour. Depends on your oven. Remove and cool on wire rack. Best eaten warm though!!
