~ fast fix strawberry shortcake ~

This is my simple alternative to strawberry shortcake, when in a hurry. I usually use frozen biscuits, but tonight I used grands. Either works great. I think the home made whipped cream and added preserves adds a special touch. Enjoy!

Ingredients

  • 1 can grands biscuits or 8 large frozen biscuits
  • 2- 3 tablespoons butter, melted
  • 3 tablespoons sugar plus 1 teaspoon cinnamon
  • 16 ounces sliced fresh strawberries
  • 1/4 - 1/3 cup sugar
  • Strawberry - spreadables or jam
  • WHIPPED CREAM
  • 1 cup heavy cream
  • 2 1/2 tablespoons confectioners' sugar
  • 1 teaspoon vanilla extract

How To Make ~ fast fix strawberry shortcake ~

  • Step 1
    Wash strawberries and slice. Mix with sugar and set aside.
  • Step 2
    Mix sugar and cinnamon, brush biscuits with melted butter and sprinkle each with sugar/ cinnamon mixture. Bake according to package directions.
  • Step 3
    Whip cream, sugar and vanilla until stiff peaks form. Refrigerate until ready to use. When ready to serve, cut top of biscuit a little less than half of biscuit. You want a thicker base and thinner top. Spread base of biscuit with strawberry jam, strawberries, whipped cream and a few more strawberries and some juice. Top with cinnamon sugar portion of biscuit.
