Ingredients

  • BISCUITS:
  • 4 cups self rising flour + more for dusting
  • 1 stick butter + 3 tbsp melted
  • 2 - 3 cups buttermilk
  • 1 tablespoon vegetable oil
  • REMAINING INGREDIENTS:
  • 1 package bulk pork sausage, no casings, cut into 8 - 3/4" slices
  • 1 tablespoon butter
  • 5 cloves garlic, minced
  • 2 tablespoons all purpose flour
  • 1 cup whole milk
  • - kosher salt & pepper
  • 1 tablespoon chives, dried
  • 8 of the - biscuits
  • - honey
  • 8 - over easy cooked eggs (or cooked until yolk is harder, if desired)
  • SERVE WITH (OPTIONAL):
  • - grits

How To Make egg, sausage & gravy biscuit sandwiches

  • Step 1
    BISCUITS: Preheat oven to 425 degrees F. Place a 12" cast iron skillet into the oven to preheat. Chill a large mixing bowl, pastry cutter, the flour & 1 stick of the butter in the freezer 15 minutes before assembling the biscuits. Add the flour to the chilled mixing bowl. Working quickly, cut 1 stick of butter into the flour using the chilled pastry cutter; until they look like pea size balls of butter. In batches, add in the buttermilk until the dough is cohesive yet still moist. Turn the dough out onto a floured surface & lightly press into a 1" thick round. Using a 2 1/2" biscuit cutter, cut out 10 biscuits. Carefully remove the skillet from the oven & add the oil. Place the dough rounds into the hot skillet, right up against each other & brush with the melted butter. Bake until golden brown, 15 - 25 minutes.
  • Step 2
    REMAINING: Heat a skillet to medium heat & brown sausage until crisp, 5 - 7 minutes a side. Reserve the fat in the pan & set aside the sausage. Add the butter to reserved fat & melt. Add the garlic & cook for 30 seconds. Whisk in the flour & cook until blonde, 3 minutes. Slowly whisk in the milk & some salt & pepper & simmer until thickened, 3 - 5 minutes. When ready to serve, stir in the chopped chives.
  • Step 3
    ASSEMBLY: With a fork, carefully split a hot biscuit in half. On the bottom biscuits, drizzle some honey & then place the sausage patties delightfully on top. Slather on some gravy & top with an over easy egg (or harder yolk, if desired) & top with the other biscuit half & enjoy with a side of grits!
