Ingredients For drop biscuits with cheddar and stilton

2 1/2 cunbleached all-purpose flour

2 Tbspsugar

1 Tbspbaking powder

3/4 tspcream of tartar

1/2 tspsalt

7 Tbspchilled unsalted butter, cut into 1/2 inch pieces

1 cpacked coarsely grated sharp cheddar cheese, chilled
-
1/2 ccoarsely crumbled stilton cheese (or cheese of your choice), chilled

1 1/4 cbuttermilk, chilled

1 lgegg
How To Make drop biscuits with cheddar and stilton

1Place 1 oven rack in the bottom third of the oven and 1 rack in the top third of the oven - preheat oven to 400 degrees F.

2Butter and flour 2 large baking sheets. Whisk first 5 ingredients in a large bowl and blend well. Add butter and use a pastry cutter to mix until it resembles coarse crumbs.

3Add both cheeses and use finger tips to mix and distribute cheese -- should resemble coarse meal. Mix buttermilk and eggy in a small bowl. Then add to the flour/cheese mixture, stirring until dough is evenly moistened.

4Use 1/3 cup dough for each biscuit and drop 6 mounts onto each prepared baking sheet - space them approx. 2-3 inches apart.

5Bake biscuits 10 minutes and then reverse the sheet pans in the oven. Continue baking for an additional 10 minutes longer or until golden brown or when a toothpick inserted into the middle comes out clean.
