I use butter in this recipe for the shortening. These are great for lunch or dinner and, if you leave out the ground mustard, I think they'd be great for breakfast! Leftovers are best if toasted.

Ingredients

  • 1 1/3 c
    all-purpose flour
  • 1/2 c
    cornmeal
  • 2 1/2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1/2 tsp
    ground mustard
  • 1/2 c
    shortening
  • 1/2 c
    cheddar cheese, shredded
  • 1 c
    milk

How to Make Cornmeal Drop Biscuits

Step-by-Step

  1. In a bowl, combine the first five ingredients; cut in shortening until crumbly.
  2. Stir in cheese and milk just until moistened.
  3. Drop by 1/4 cupfuls 2 inches apart onto a greased baking sheet.
  4. Bake at 375 for 26-28 minutes or until golden brown.
